Franck Descas

Franck Descas learned his craft under Henri Charvet, Maître Cuisinier de France, back when his restaurant held a Michelin star. What he kept: precision in technique, respect for the product, and this idea that cooking is first and foremost attention paid to the person eating.

Creole, Mediterranean, classic gastronomy: his repertoire is vast.

At Les Halles, he cooks what he likes.

Anything is possible

The menu is the stands.

You spot a gorgeous sea bass at the fish counter? The Chef prepares it in a salt crust. A rack of lamb catches your eye at the butcher? Stand to attention — it arrives roasted. The free-range chicken? Braised in milk, like grandma used to make — only better.

Below, the prices at each stand. Add €10 service per adult, and the Chef does the rest.

Of course, it all depends on the season, the morning’s delivery, whoever ate the last chocolate mousse before you, and the Chef’s mood. We can’t promise everything. But we can promise we’ll make do, and that we love him anyway.
