What the Sea Sends

The Halles fish market follows what arrives. No stock, no freezer. What's on display this morning comes from a French auction. What isn't sold by evening didn't exist yesterday. Wild fish, mostly. Line-caught when possible. Coastal when the season allows. The sea decides, not us.

The Display

Depending on the day, depending on arrivals: line-caught hake, wild sea bass, red mullet, sole. Noble fish and fish we rediscover — pollack, meagre, turbot. The fishmonger knows what he received, how it was caught, where it's from. He tells you. He prepares it. He advises you. Looking for fish for tartare, ceviche, carpaccio? We guide you to the right piece, safely. Want something simple, a fillet to pan-fry with olive oil? We have that too.

Selected oysters, shrimp, langoustines when the season allows. Whelks, periwinkles, clams. What's eaten raw and what's cooked. Oysters are opened in front of you. It's a craft that doesn't hide.

What If You Stayed

A sea bass just arrived. You're hesitating between taking it home and eating it here. Take a seat. The Chef handles it. Cooking, sauce, garnish. What was on ice ten minutes ago is on your plate.
