You buy a product at the stand. A line-caught sea bass, a beautiful cut of meat, an aged cheese. You decide to eat it here. The Chef prepares it for you. €10 service per adult. Free for children.

What he kept: precision in technique, respect for the product, and this idea that cooking is first and foremost attention paid to the person eating. The menu evolves with the seasons.
